Default Wheel and tire size for 3/4 ton axle swap

Hey guys--Heres my setup: 2000 5.3l Silverado with a rear axle out of a 2007 2500HD. Im looking to find some wheels that match the 6 lug pattern in the front and the 8 lug HD pattern in the rear. Plain black steel wheels are cool with me. My question is: What size tire will fit on the rear? Looking for a 31" tall or similar tire, 12" wide. Are 17" wheels the way to go?
Cragar makes some wheels that will probably work, but Im looking to find out if there are brake clearance issues with the 3/4 ton axle.

07 trucks still had 16" wheels so you can run those. The only thing that will definitely be different is lets say you use stock center caps, the 8 lug caps are quite a bit bigger than the 6 lug ones
