edelbrock carb questions help

I'm sure you've seen me post around the site some but i have a question and this is all bugging the **** out of me. I built a 383 stroker motor and i put an edelbrock 750 (#1411) carb on it. I'm having some serious problems trying to get it tuned in. Runs GREAT wide open and at idle. But cruising around town my a/f ratio shows it going lean and im gettin a studder from the motor. Say i'm cruising at 1500 rpms, 3rd gear just barely accelerating.. the motor just studders but when i stomp in it it just takes off and everything is good. Deceleration is good just cruising. Now, its a little lean on the gauge when im getting on it (not in the red) but on the lean side of the yellow. I have tried jetting up the primaries in it carb and this didn't really change anything. Ran good at first then went back to the same old thing. Also tried going with a smaller metering rod to get more fuel in but it just kept on doing it. Now has anyone had this prob with their edelbrock carb? I've heard they are not very streetable (wish i knew this before buying it). Also heard it is too big for my motor but i know many guys that have 750's and their 383s and its just fine. Plus wouldn't it be running rich if it was too big? I'm new to the whole carb thing so its all getting to me and now i have a headache from hell from trying to figure all this out. So just let me know what yall think and hopefully i can figure something out. Thanks.

aight i jetted the carb up and put in a smaller metering rod.... its still lean cruising but not too bad... the timing was what was making the motor bog down and the dist. was a little lose just enough to make it move when i cranked the motor... so i got all that fixed and everything seems alright now other than me breakin the c clamps that hold my drive shaft on the rear end =)

haha i have had so many ppl tell me that. anyone want to buy a 1411 edelbrock 750 electric choke with a calibration kit? if i could sell mine id get me a street avenger holley. one of my friends rode with a guy that has one on his 355 and he said it runs like a bat outa hell. so ill def be looking into it.
