The key to it all, is a good tune. I had a STS remote mount and towed heavy loads alot.
AFR was 11.2 at full 6# boost and timing was conservative. With the 60mm? Turbo i could get 6# at 1400rpms easy if i needed it.
Never worried with EGTs since i wasnt pushing the turbo to its max. I use to race some my buddys and id have a 18' trailer with 5 honda foremans. ~6000#.
Towed a ~7200# box trailer from south MS to north KY after i put the isky cam in. Couldnt ask for more.
Ill be goin back turbo soon just for towing and the fun of it.

i tow with my turbo tahoe. its awesome compared to stock. i run water meth and have it set to start to kick in around 5psi. rolling through the mountains in Tennessee i stay at 1200-1400 egt in or out of boost. if a big grade comes along i drop it into 3rd so the tcc stays locked and i use boost to pull the hills. at part throttles i have it tuned to run more timing than wot boost. its hard to explain really, but i run different far at part throttle boost than wot also. i see no need to flood it with fuel when your just part throttle boost. in doing so its help to keep egg's down while towing. i towed a 30ft camper through some steep grades in arkansas with my data logger going. i was able to lock the trans in second and lock the tcc and use boost to pull the grade rather than the torque converter. it dropped trans temps from 180-190 down to 160 on a 100* day.
so yes, in my opinion towing with a turbo is great. if you know how to set the tune right. and 5-6psi at 1/3 throttle at 2000 rpm isn't bad imo. but maybe thats just me.

also maybe worth noting if you go to rich at part throttle boost you will feel the power loss and boost may even start to fall off. this is one of the things i noticed while tunning. i thought fat would be safer but with more fuel and less timing egg's rise. pull fuel and add timing get went down and power went up and it ran smoother.

Dont get me wrong, both types of FI would tow well but there is so much more involved with going turbo and he said he isnt intrested in making it a race car he just wants a good tow setup.. both types of FI would be good, but because of the simplicity of supercharging and its cheaper than going turbo, i just suggest supercharging.. and with a setup like a tvs1900 at cruising rpm he would be putting out roughly 350-400 lb. Ft of torque.. thats why im saying supercharging over the turbo..

a client of mine has a 305cid pick up to pull his boat we are going to use a 60mm and give it a wirl he has it up and driving still need to do some exhaust work and the snow to melt before towing anything though

I plan on being able to pull a open car trailer to Ocean City sometime in the future once I get my turbo on. Like everyone pretty much has said, dont put too much throttle into it and should be able to keep IATs down and just let the turbo work at low boost.

Ive towed a 24 enclosed with my steetrod in it. both with a P1 and the turbo. both towed pretty well. I dont tow nearly as much as I used to but wither way you go will work well. just make sure you dont have a big converter.
