I was talking about the boost reading on top of atmosphere that the sensors are capable of :
1 bar sensor can read to atmosphere ( actually a little less because 1 bar = 14.5 psi but atmosphere at sea level ~ 14.7 psi). The sensor in my truck reads 101 to 102 kPa with the key on engine off and I am close to sea level.
2 Bar sensor can read atmosphere plus 14.5 psi boost
3 bar sensor can read atmosphere plus 29 psi boost

But things have become a little more clear now. My deductive reasoning skills could use some sharpening apparently. I guess any boosted application would benefit from a 2 bar setup then since the stock 1 bar maxes out as soon as you reach atmospheric pressure.

That is correct and in boost your VE table will be maxed and running on the last column (105 kPa). The MAF will still be in operation but it to will max out at 512 g/s airflow. Fuel will have to be commanded from the PE table when in boost as well as at WOT to get an acceptable fuel mixture but it will be based on RPM rather than airflow.
You can run quite well on a 1 bar MAP but there are limitations and basing fuel on RPM is a little bit coarse. There are always compromises.
