I would guestimate a sub 2000 RPM, maybe right at 2000, cruise for your specs. Looking forward to your order -

I have quite a few guys towing with the 278mm and it works great. It uses the 12" clutch, so when you get to lock up it is plenty strong. So just get a cooler like you mentioned to keep the temps down while not in lock up and you will be good to go. Under 200° is good, but under 180° is preferred.

What's your max recommended stall on this TC for towing with a 5.3L Tahoe? And does changing the cam afterwards (but keeping the cam mild) affect your recommendation?

There is not a definite answer. Depends on what you are wanting out of a converter. I have a lot of guys with the 3000 that tow quite often. They have big coolers to make sure the temps never get high. I also have a few guys that like a 2500 for their towing/performance truck. I think you will be fine with a 3000 for most towing needs. If you use it for work and tow just about every day and towing a couple tons, then might step down to the 2500 or even leave it stock. Hope this helps some.

Just another praise for the 278mm stall. My 60' went from a best of 2.06 with the stock stall to 1.83 with the Circle-D. Also my shifts only drop 1500 between shifts instead of 2k. There is no way I would look past this stall...it's by far the most bang for your buck.
