Question Gears, locker, Cam, Stall question?

I am now driving my wife's Mazda 3 to drive to work and back I am looking to finally do some work on my truck. As the title says I am looking for some recommendations on the following topics.
Current Set-Up:
2007 4.8L
Stock 3.23 gears
BB Tune
LPP LTH
Usually towing a large smoker on a trailer to BBQ comps during the summer 2 to 3 times a month.

I am looking for a gear set up of either 3.73 or4.10/4.11's with a either a limited slip set-up or a Detroit tru trac. My concerns is that what is the RPM going to be one the highway? I understand going around corners I will hear the tires catch a little but no concern there.

The cam I am unsure of currently and I would like a once that at ldle it lopes but is still good for a daily driver. Recommendations needed badly.

I am either going with a Yank or Circle D but not decided on brand. I know both have forms to fill out and from the specs you give them they have recommendations for the stall. I am looking for combos that you all run that works well.

something like a 220 cam on 112-114lsa, trutrac, 3.73, 278mm 3000-3200 converter would make for a good daily driver setup. The 278mm converters are still pretty tame converters, they are not wild at all and work well for a DD.

Thanks for the information I am thinking more close to the 3.73 gears with a locker. $1400 sound about right for install of gears and locker?
