Ok, Here are the pictures. I'll explain what each one is.
Picture 752 - The green arrow is where I measured from to the seal. That point is the furthest back in the transmission the converter hub can go. The red arrow is the little engagement piece for the front pump? where the notches in the outside of the converter hub engage.
Picture 755 - Just showing where I'm measuring to at the seal.
Picture 756 - Just showing the measurement that I have from the very furthest point the converter hub can go to where is shown in picture 755. The measurement is right at 1 7/8" maybe a touch bigger.
Pictures 760 and 761 - Showing where that measurement hits on the hub. Notice the 1/4" or so of extra hub there. I can get the converter in to that point and it won't go further. I honestly don't see how it could anyway. From talking with Jack @ Precision I think it is supposed to go further in but, it's in as far as it can go.
Pictures 757-759 are just showing the crank spacer and the crankshaft. It's the short crankshaft right, look to be to me.
Here is a link to the pictures.

Grip - Did you see where I measured to in the transmission and how that measurement translated to the hub? That is as far as the hub will go into the transmission and it has been there believe me.

well if your 100% sure it has seated...
do you have your old verter, compare them side by side? are there any differences? Maybe the verter snout is to long.

My old converter is a 4L60E converter. I have no other 80E converter to compare to. I did call Jack at Precision Industries to check the measurements and he said it was a standard hub and the overall measurement was right.
From talking with him I don't think the converter is where it should be either even though it's in there all the way. That is what is so confusing. If I could get it to go back another 1/4" that would be PERFECT but, it is hitting the furthest surface(green arrow) inside the transmission it can hit already. I'm going to try and get some more pics that will show some other stuff.

Could it be the wrong front pump in the transmission?
gamedawg looked on the TCI website and said the bellhousing to mounting lug measurement should be 1 1/8". That is exactly what I have. I'm so confused.
Anyone want to buy a truck? Bring a flatbed.
