Default Offset and rim width?

There's a zillion posts of rim/tire sizes but not much info on what offset you guys are using. I see rims for sale that have 18mm up to 30mm offset, but the 30mm are harder to find. After measuring, it's still hard to tell whether the front of the tire is going to rub.

Which one do you guys run for a 2-4 drop? Don't want to roll the fenders - Looking at 18" in as wide as possible (seems like everyone quit making 18" rims already)
