I don't know for sure, but when I want to find a ballpark spring rate I simply add weight until the spring in question has dropped 1" in height. Try adding 200lbs for starters directly over the rear tires and measure before and after. Springs rates are generally in pounds per 1" of compression, so it's a red neck way of figuring the ballpark spring rate of your rear coils. I'd start with 200lbs and go from there, if you end up with 300lb/in that wouldn't surprise me.
On second thought, perhaps do some research into whether or not the rear 5-link in your Tahoe has progressive rate coils. I doubt GM would go that far, but if they did make the initial 1-3" soft with the remaining compression distance stiffer via progressive rate coils in the rear, it'll throw off your "rough" calculations.

You could try limiting straps for the front or air assist bags in the back.
Those things that fit betweeen the coils on springs will make your springs stiffer. If you wedge one set of coils and you have 10 total that's 10% increase in rate.

i thought about a travel limmiter for front but wasn't sure how to do it still yet. i thought about welding a 1/2" by 1/2" bar or some plate of some sort to the upper control arm. with a strong eye loop. then weld a tab to the frame. then at the track just attach the eye loops. but i'm not sure how strong it needs to be.

Put air bags in the springs (they make them for yours that go inside the coils) and keep the fill valves separate. That way you can air them individually. I put them on my truck and with the open diff, it makes a hell of a difference. I run 10psi in the left and 25 in the right. In 2wd on the street, it almost always spins both tires in a strait line instead of the 1 tire fire's of before and launches MUCH better at the track. Always wanted to spin the right rear and left front before, now it wants to hook and go, but still spins some times if I break stall it much past 3000 on the launch, but seems to spin all 4.
