what's the widest tire I can fit out back?

Rubbing is caused more by you tire height also, so dont forget about that, a 285/50/18 would probably not rub at all up front.
Do you really want a taller tire out back, if your staying stock height maybe but your losing gear and putting more weight farther from the wheel.
stoechiometric also put a 305 on a titan rim, but he had to widen his fenders so they didnt stick out past the fender, ill see if i can find his pics

Just to give you an idea on what I'm cooking. Here's a crappy phone pic of mine.
Don't know how wide or the backspacing of the 18's but the NNBS 20's are 8.5" wide I believe; Thes are a friends wheels/tires; Toyos 315/35/20 and tuck fine on mine with rolled lips, his fronts are 275/40's and those didn't fit on mine (too low). I haven't bought them cause they didn't have the 255/40/20 I wanted for the front. Have to wait for the new Toyos, if not I plan on going with 275/35/20 Nittos 555 (Front) and 305/35/20 Nitto 555R Drag Radials (Rear).

The escalade wheels were a good buy, but now that your wants/needs are changing, you will probably be happier in the end making it all work together.
I try to be a "measure twice, cut once" kinda guy, and here is as far as I have got. Currently my 2008 Silverado has stock 20's wheels and stock 275/55/20 tires
I am looking at the Centerline ultra archer or stingray III 20x8.5's and hoping to find Toyo Proxes ST's - keeping 275/55/20 size in front and then 305/50/20 in the rear. Because the centerlines are lighter than my wheels, I will actually reduce total tire/wheel weight and get more grip out back, which is one of the few ways to get both more performance, and save a bit of gas.
You could go with this idea as is, but you will probably change it to make it yours, which is cool, so keep us informed.

The 305s will work with the escalades, I don't care if they stick out a little. Actually I think it'd like that fat look better. Looking at my truck now from the rear the 285s actually look skinny...they seemed nice coming up from stock 255s, but I want a fatter look and better grip now. All these guys on here post videos of cammed 6.0s just blowing off the rears...Id like to avoid that.

I have not done the tire change yet, but a 285/60/18 is 11.2" wide and a 305/60/18 is 12" wide, so that is a 7% increase is surface contact. I assume that will help, but I dont know by how much. Hopefully we can get some feedback from those who have already done the swap.
I assume the reason trucks with bigger power spin like crazy is that trucks have poor front to rear weight ratios, and when guys do weight saving tricks to trucks, like taking off the spare tire and replacing the rear bumper with a roll pan, they mostly take weight off the rear, which is a mixed blessing for launching.

its on an 18x8 wheel and wore perfectly even at 27psi. i run 19psi most of the time though since its not a DD anymore.

I run square honeycombs but staggered tires.
255/50/20s up front. About to be lowered 1"

Why not just run 295/50r20 up front? How close are you to rubbing/how much rubbing does it do?

I'm running a 305/50/22 and dropped on spindles and shackles on a '13 Silverado crew cab with High Country wheels. It rubs a little bit lock to lock and had to use a 1/2" spacer in the back with Excursion studs. Ran the same on my Avalanche in a 305/55/20 (IIRC) and had the same issue, rubbed a little bit turning with 08-13 LTZ wheels.
The rear, you'll have to run a different offset to keep it from hitting the frame if you don't want to use a simple spacer.
