Default 1 or 2 cats?

Not the meow kind lol. I'm setting up the exhaust for my cherkoee build that I am going to be starting. I'm going to run 2.5 pipe off each header into a Magnaflow y-pipe with 3in out. I plan on running a cutout right after the y-pipe for my "fun" times. I'm planning on making this truck emissions legal. Think I could get by with one high flow cat (the one I like is rated to 5.9L and the test vehicle was 6000lbs), or should I go with a second one inline after the first? I plan on running a 3in Borla XR-1 muffler in the system as well.

What year truck? How many did it come with orginally?

LOL ya. I'll put one on there after the cutout just for visual and to keep the truck somewhat quiet (hehe).
