I agree that you should boost it instead of running nitrous. If your looking at a 20k budget you can afford the boost and you never run out like you do with nitrous.
It shouldn't be TOO much of an issue to get into 11's with a single cab
You will definitely want a 4l80 transmission See our sponsors on the right. I'd recommend Finish Line Transmissions.
If you want to build a set of heads talk to West Coast Cylinder Heads (also to the right) they can tell you exactly what you need.
Forgot to let you know that the search sux when using numbers so 5.3 4.3 6.0 doesn't work.

To hit 11s...IMO I'd swap into a ...
Engine - Lq9 6.0L fully bolt ons.....UD pulley, E-Fans, Long tubes headers, and awesome Tune, K&N CAI, Full dual exhaust, cam...MS4, 150 shot of N2O
Rear end - Trutrac Unit with 4.10 gears
Tranny - built tranny with 3600 to 4000 stall
Suspension - Caltracs traction bars
and some good Slicks shall do the trick.

I would be interested to see your results from the T56. Anyone I've spoken to about the 6speed loves it in their truck. Plus you can run 4.56 or 4.88 gears and still have some highway milage. I also agree with the built and boosted engine, turbo or supercharger. I'd recommend the Magna Charger TV2300.
