My old setup ran with the MAF unplugged. It ran, but not so well. When the MAF information is missing, the PCM reverts to the engine airflow tables as discussed earlier. Now if these tables are not correct, the engine will not run.
Speed density tunes require no MAF. The computer is using hard airflow tables that are tweaked based on temperature and pressure (MAP sensor).
A non-speed density tune also uses these tables during transient operations such as acceleration where the MAF cannot provide enough information due to rapid changes.
The moral is: the airflow tables must be suitable for the actual air coming in or you will have an engine that idles poorly, stumbles or dies.
All of the above is referring to air. There may be a problem with fuelling as well, and it's a whole other can of worms. And there is also spark, but in general it shouldn't affect idle to a huge degree.
