Stock for stock...there is no comparison...my 6.2 ext cab 4x4 took my bros SS when it was stock with a tune and blew away my buddies 5.3 stock...however, with the right upgrades and good tuning the 5.3 is one hell of a machine...
IMO if I was to buy one right now strictly based on performance I would get a SCSB WT with the 6.2 and 3.73's...

Gas mileage will be about the same. It's more about the amount of weight the engine has to move and your right foot than engine size.
The 6.2 will destroy the 5.3 performance-wise. And you can't even compare the 5.3/4L60E to the 6.2/6L80E. The later 5.3/6L80E will perform better than the older combo.

FWIW you can't get a regular cab with a 6.2. I tried, the dealer said absolutely no way from the factory. I also tried to get a regular cab Colorado with a 5.3. No go, only extended cabs or 4 doors for the big engines.

Nice...so I guess I did it right the first time!!! Except for the 4wd...not sure if I'm glad I have it (for launching purposes) or wish I didn't (for weight purposes)...maybe once I get a little more HP I'll be happy I went 4wd...
