Different MAF Sensor?
Would it help any to replace the stock MAF Sensor with one from something like a Vette? I didn't know if one from something like a Z06 would be an improvement and if it would even be worth it?..

LEAVE YOUR MAF ALONE
The older Z06 has virtually the same MAF as the trucks but there is not significant power to be found by playing with the MAF with out costs.

The 2001 Corvette LS6 and 2001-2004 LS1 use the same MAFS as the 1999 and up trucks do, they are screened and are 85mm. The 2002-2004 also use an 85mm MAFS but the sceen isnt there for the LS6 apps.
I just bought a 2001 85mm MAFS witha screen for $35US and am installing it instead of my L31 75mm MAFS, I will have to do some minor rewiring and will be using Tunercat to insert the new MAFS frequency values.

Leave the MAF alone. Dont de-screen your factory MAF. Dont put resistors in place of your temp sensor. Leave it alone.
