Default Head gaskets

Ive almost got everything together for my head and cam swap, here are the specs
Comp 215/223 .604/.610 112+5
243 heads milled .030"
Lunati gold dual springs good for .660" lift
Ls7 lifters
Ls2 chain
Comp pushrods
Now I just need to know what head gaskets to run and what thickness ( don't want to run into clearance issues). Also the build date on my truck is July 2003 so would that mean I have the old style head bolts with two different sizes? It says from mid 04 and earlier so that's what I was figuring. Thanks

GM 5.7L/5.3L Multi-Layer Steel LS1/LS6 Cylinder Head Gasket

Those gaskets will work great and you should have ample clearance! And yes, you should have the early style (long and short) head bolts in your 2003 engine.
