I'm really wanting some stainless bolts since my headers are coated. I've found the Stage 8 locking are stainless but thats all that I can find so far.

Check out www.go-breslin.com. These are a new type of locking header bolt that have only been on the market for about a year. I have these in stainless on my Av. They're expensive but you'll never have to worry about them coming loose. I retorqued mine after about a week's worth of heat cycles and haven't had any problems with loosening.
