The 6.0s have an oil cooler because they come in the HD trucks that tow heavy loads and put the motor under heavy loads so it needs to be able to cool the oil there is no need for it in a half ton truck unless youre towing heavy all the time or autocrossing. You just take the line bulkhead off of the side of the block and put the one from your 4.8 on there. The reason you should install a thermostat is because in your case the truck isnt going to have a really high oil temp since its not going to be worked hard constantly and if the oil doesnt get over 212*s enough to burn the condensation out of the oil you can have contaminated oil unless you change the oil religously. Id recommend doing some research over in the road racing and external sections on tech.

then replace your lines. Seems simple to me.

with a mild 5.3 and a mild stall in a daily driver with minimal towing and occasional heavy payloads, does it make sense to ad a cooler? It gets hot here in the summer.

Unless you are adding a turbo. The oil cooler is really not needed. I added one because I added the turbo. I have a monster oil cooler and it never goes over 180 degrees even in the summer pulling a 14' enclosed trailer at 85mph + . I spent way too much money on it. Wish I had used a smaller one. Mine is larger than this one

I used one of these to build my system. http://www.lingenfelter.com/mm5/merc...Store_Code=LPE

If you do buy a nice expensive one, get one with a thermostat so the oil will come up to temperature.
