you might try to supercool it too to get all of the metals to contract so if u pull the head off, put some dry ice on it for a while. Another option is to break open a can of refrigerant and spray it on the bolt and surrounding part of the head. Propane works too.
Oh yeah, and if the ez out breaks, weld a nut to it. Unless the heads are steel.

I am going to attack them tomorrow, If I break another manifold bolt, then I might reconsider.

just a FWIW, when i put the heads back on my truck. i dropped one of the bolts and absolutely could not find it. Ended up not putting it in. Hasn't leaked in 2 years. they are stock manifolds.
oh, and just about a 4 or 5 months ago i found the bolt wedged between the frame and uca i believe, didn't put it in though.
