Just thought I'd update this now that it's all done.
I went with the stainless headers that are in the link I first posted with the 3" collectors. I then went with 2.5" duals back to a DI/SO 22" big body Magnaflow. The cats are gone, and in their place are 2 glass-pack bottles (one in each pre-muffler pipe). Stock single tailpipe location. So the configuration is the same as the stock 6.0 setup, just with different components.
My goal was better flow, and a system with good velocity to help out low-end.
IT IS AWESOME. It's got a bit of rumble to it. ZERO drone at highway speed. The shop that did the custom install did a really tidy, sweet job.
If stock sound level is 1, and open headers are 10, the volume of this setup is maybe 3.5? Not loud enough for some of you I know, but it's exactly what I was looking for.
