I have a 2012 silverado 4.8 with 180,000 miles on it still runs fine no oil leaks or anything but I'm thinking about getting another used motor to freshen up and do a mild build and put in it. So my question is what engine would work without changing alot of wiring etc. Could I put a 5.3 in it I'd assume the computer would just need reprogramming. If so what year engine would be best to get? Thanks in advance

The most popular 5.3 in the generation you need are going to have AFM/DoD, so those engines would require that you delete those parts and the costs will rise because of the extra stuff you need to purchase to make it work.
If possible you'd really luck out if you found a 5.3 from a 2010-2014 Chevy Express or a GMC Savanna van, those came with 5.3 but did not come equipped with AFM/DoD or VVT (variable valve timing). That would make swapping one in cost less because you don't need the delete parts and would only require a cam/lifters if that was something you where wanting to change.
That 5.3 is labeled as the LMF engine. Examples on the AFM engines are the LY5, LMG and LC9.
Lastly no matter what the computer would be tuned, which you already said.

The only Gen iv 5.3 that came devoid of AFM and VVT was the LH8 used in the H3s and Colorado/Canyons. The subsequent LH9 that replaced the LH8 in 2010 has VVT. Good luck finding one of those though lol.
