As far as a stall affecting drivabilty, it will be the same as stock whenever it locks up in 3rd or OD. So long trips shouldn't be a problem. But like Silverado Kid said, you would definitely want a stall higher than 3200 for the MS3. A set of ported 243's would also add a considerable amount of power. Just something else to think about.

i was gonna run a cam but i decided for now not too.....im just gonna run it with full bolt ons...for me a figure it will go from kia to ferrari!!! power wise lol
then next year ill do a cam......
im trying to see if my tranny is anygood i hope it is so i kan just have it rebiultim not sure what the w/t trucks came with maybe a 4l65e? obviously its not the 80e....
is a 65e good for a 6.0? i think ima run a converter too and everyone ses do it before you swap everything in not later!

It's hard to say dude. Some guys roll in cammed trucks with stock stalls and are absolutely fine with it while others "need" a higher stall. I honestly don't think it would be too bad, but many people would say the opposite. You just have to decide on the setup you want and go from there. A 2500rpm stall is a little low for trying to get good 1/4 mile times anyway.
