I use Mobile1 5w 30 and I'm changing to 0w 40 because of valvetrain noise. It's not real bad, just there. Do you think the change in oil weight will quiten it down any?

0w 40 or 10w 40 ... just trying to stop valvetrain noise and I'm in Florida, so I think I can get away with either.

... picked up up a quart of Mobil1 0w 40 ... almost got a quart of the Mobil1 15-50 just to thicken up the 0w 30 that's already in the car. Would that have been a mistake? I'll go with the 0w 40 for now, but, is 15w 50 too heavy to run in an LS1?

Just be careful not to go toooo thick and create a bunch of oil pressure - same with over filling.

Most common mistake is toooo thick or overfill which creates too much oil pressure and the oil blows past the SC seals - over a long period will destroy the seals and you will injest your engines lifeblood.

Best advise is to honestly check the oil level EVERY 1000 miles and look for changes in level and viscosity. This forwarning will clue you into a problem before it becomes a complete need for rebuild or replacement of both the SC and the block.
