What year did GM start putting the 6.2 in the trucks, and what were the configurations?

2007 GMT-900 Sierra Denali. Crew cab only.

Same year with the Yukon Denali and Escalades.

Could you get it in an extended cab in either gmc/chevy in 08?

No. You could only get the aluminum 6.0 (L76) that year in non-denali trucks. It came with the 4l60e still.
