If the PCM is properly tuned, mpg's will not suffer. My favorite benefit from my 160* stat is that my heat comes up very fast in the winter, since the stat opens sooner therefore allowing flow through the engine/cooling system/heater core sooner.
160* stat questions seem to pop up from time to time, and there was a big thread with much debate about the subject a few years back. The best thing that I took out of that thread is that the LS series of engines were designed to run in the 195-200 range, and seem to perform best between 180-200*. Eventually I plan to swap out my 160 for a 180 myself

Billy, I don't know why you haven't already. I've had the 160* on the 5.3 and now the 6.0. I've been running low to mid 170's consistently, but the real test will be in the summer. The swap is simple.
Last year upgraded to the Genesis 34" all aluminum radiator, and just this week to the 4000cfm Dorale e-fans. I threw some fresh 50/50 Dex-Cool just tonight, and I'm still at 176 at the high point, low at 168.

Have you tried "Water Wetter"?
I use it in my '68 big block Mopar (car) and it took about 10 degrees out of the coolant mix.
