Default Coolant Temps (Weird out of no where) UPDATED!

my 2004 RCSB LQ4 has always ran about 180ish traffic, E-way even just idling never budged once the truck got up to that temp I recently bought it and put about 2k miles watching the gauges 180ish the whole time

last night I was on the E-way cruising with a BMW no traffic we was doing 80-90mph at times (open no cars) my exit came up I got off and hit some construction traffic looked at the gauges and the temp was a hair under 210 degrees i know thats not over heating but this truck never got that hot before so i'm a little worried about this

I checked the coolant its green with no signs of oil, the oil looks good clean no coolant in it, the truck does smoke a little like if you warm it up and it sits for 5 to 10 minutes then rev it (was told its valve seals) but just idling no smoke

any ideas?

UPDATE:
this is really crazy now? truck will sit and idle for hours and the temp stays at 180*? on the E-Way any thing over 50mph 180* heres the funny part driving at 20 / 30mph temp climes ???? WTF?

Don't trust the gauges. Get a data-logging scan tool.

The temp gauge in the cluster can be off as much as 30 degrees and can fluctuate for no good reason (same temp sensor output, wiggly stepper motor).

If it gets hot just sitting at idle its probably a stuck thermostat.

in traffic its climes to around 210* moving it drops back down to 180*

i'll keep my scanner around and check it with that, just worried since it NEVER was over 180* before

If you are reading your factory gauge its gonna be off. Mine always shows 208-210 but scan tools shows 198-205

Id be willing to bet your truck runs over 180 most all the time, these trucks generally have a 187 thermostat

Sounds normal. It's a clutch fan correct???

When your moving it can draw air through the radiator faster.

When you come to a stop you still have all that heat in the block from being under load. It has to pass through the cooling system to get out. Sitting there in traffic, the fan doesn't pull as much air through so it take longer to cool back down.
