-Remove tailgate
-Remove trailer hitch
-Remove spare tire
-Remove jack inside truck (for raising vehicle)
-Remove passenger seat
That's all the major parts that weigh alot and are easy to remove. If you're reducing weight for racing, removing the tailgate may hurt your performance. I tried it once and spun half way down the track (1/8 mile track).

A roll pan is nice looking Plus it replaces the rear bumper...

Rear bumper, front sway bar, passenger seat(s), and there's probably some more. Don't recommend riding around without the sway bar though; but it'd be fine just going in a straight line down the track

Lighter wheel / tire combo. This will reduce weight AND rotational inertia (moment of inertia)

Drill out all the spot welds for the body panels. Cut parts off the frame that you don't really need. Lighter tire/wheel combo. Take a crap before you go racing. Oh wait you're not looking for THAT drastic weight reduction?
