Will 16's clear on the rear with the disc brakes?

^No sir. I think they'll clear drums though. But no, that's why 17s have been standard since 05, the big rear discs and calipers.

No not true. They went to 17s cause of the front brakes. And no 1500 had rear disc in 05 only drum. Idk about the 2500 and stuff but I know with 1500s.

2005 and 2006 1500s came standard with rear discs. The switch to drums came in 2007 with the GMT900.

Nope, my 2006 GMC Sierra 1500 had drums on the rear, I believe they switched to drums in 2005 cause my dad has a 2004 and his has rear disc.

I've owned 2 2005s all with drum. And my Buddys 05 has drums. It was for the front brakes

And also my question was for 2011 with the rear disc brake option. Will 16s clear it.

Sorry, let me correct myself then. They started putting Drums on the rear in 2005.

As far as to answer your question about the 16's im not entirely sure, maybe someone that has run 16's with DR's/Slicks on the rear can inform you better. Most all the NNBS guys run 17's with DR's/ET Streets on the rear for this reason.
