any tips/tricks to get rupture disk fitting off?

Wow.. were you going the wrong way by chance? If it was that tight odds are the valve is ruined. The fitting probably cut into the valve area where the burst disc sits. If it did save your self from looking 10lbs of nitrous and replace the bottle valve.
