Looks like 285/60/18 has a lot of tire choices. That may be the best route. I have just heard too many bad things about the Goodyear GTII tires to wantto put themon with 20" wheels.

I was going to go with 20 inch wheels with the terra grapplers, but the price of the tires that fit the 20's are over $400 a piece . So I opted for 18 inch Weld Cheynne 6 chrome wheels with the 325/60 Nitto's. I think it looks just right on a Z71. I have seen 36 inch Swampers on 20's and I think it looks good but it does look kind of odd. For day to day use go with 18's, but for show bling factor get some 20's. If you want to lift it real high, you can get 40 inch tires for some 22's
