I painted mine when I sound proofed my cab. Everything except the dash was out, so I had relatively little to tape off.

I got mine painted up last night. I had a larger tarp that I've had for a while, so I covered the seats and ran it behind the pedals and along the floorboard and covered the footpedals with plastic bags. Took some sandpaper and sanded them down. The rust was just surface but caked on pretty thick, but really just needed to smooth the surface down and then coated them with some satin black rustproofing paint that I had. I sprayed them as far back as I could without overspraying some of the wiring harnesses. Looks much better IMO.
