Most everything I've heard is you will need +30mm offset to tuck

I'm currently running a 305/40/22 on a 22x9 rim with +25 offset and I rubbed on the front inner fendor plastic. I ended up molding the plastic to clear. In the future, I'm going to get wheels with a higher offset.

yes, it will fit, if you shorten your rear end.

Backspacing being 5" and the wheel being 8.5" wide, you are at a 3.5" lip. That coupled with a 295/40, I don't think its gonna make it?

For example, I have 22x10 with 7" Backspacing and my rear tires just barely clear the fender. I am only dropped 6" and running a 285/40.

i have a 275/40/20 on a 20X8.5 +12 with a 6" drop and it cut my tires all up until i rolled the fenders on the bedsides. now it clears but there is no room for any bigger tire or a lower offset wheel

I run a 295/45 on a 20 x 8.5 with +20 backspacing and there is no way I could ever do a 7inch drop on that set up. It is pretty much flush with the wheel well. If you had the skills to flare the fender, it might fit then, but its gonna have to be flared quite a bit to make it work.

i have a 6" drop in the back and i'm thinking about 295/40/20 also. i have centerline 20x8 that are 5" backspacing and +12mm offset. it looks close, right now i have 275/45 with no problems.
