If you've ever worked around a construction site, I'm sure you've heard the term "nominal width", "nominal thickness", "nominal this, that" ect ect. A 2"x4"x8' long construction grade piece of lumber is truly only 1.5"x3.5"x8', which they consider "nominal" by dimension, even though it's commonly called a 2x4. Same goes with high flotation tires. Most companies can get away with calling a 32.5" tire a 33, because really...who's measuring? That little .25" difference in ride height WILL NOT make or break an off-road rig. Typically a 30x9.50 tire is a 29.5x9.50, a 31x10.50 is a 30.5x10.50, a 33x12.50 is a 32.5x12.50, ect ect. Therefore, when comparing a 33x12.50 and a 285/70R17, you're really getting the same height, the difference is width, in which case I will always take the skinnier tire off-road unless you are out mud bogging or climbing the snowy alps where the mud or snow is deeper than your tires are tall.
