Default Tune Help/Suggestions

Ok guys, got a bit of a random possibly stupid question. Here is a list of things done to it so it can help settle obvious problems. It's an 01 shortwide with a 5.3, with a 222/224 .566 112 cam, part numbers an xr275hr from comp with pacesetter longtubes, stock intake manifold, 2500 stall, eaton locker in the rear with a tune done by a local tuner in fort smith, arkansas. Issue number 1 - it runs great except for at initial start up it fluctuates and tries dying on me when i first put it in gear. Issue number2 - i get around 14-15 around town and 17 tops on highway. I dont have many friends that have done as much stuff as i have to their trucks that i could reference my issue to so i was wondering if anyone with a close setup like this could tell me if this is normal for what i have or if i need to find a better tuner. Also it runs pretty rich all the time too which makes me think it's because of the tune, let me know what you think, thanks.

How do you know its running rich? The stumble going into gear seems abnormal. That should be sorted out. Mileage isnt that far off honestly, if at all...

As mentioned how do you know it's rich? Sounds like your airflow tables need some work and your mileage is about normal.

it could be a bad way to go about thinking this way, but it smells so rich when I'm idling, and i check the plugs about every 6 months and usually replace them every other time because the porcelain is stained white and the tips are already burnt down a bit, which leads me to believe it's dumping fuel
