What years/models for parts: Throttle, wiring, MAF
I have a 2002 6.0L LQ9 out of an Escalade.
Looking for a DBW gas pedal, mass airflow sensor, and complete engine harness.
What years and vehicles can I get the parts from that will work on this engine?
Want to hunt the salvage yards etc and would like to know what other options I can use besides a 2002 Escalade.

For the closest direct fit with parts, you should be looking for either an ‘01/’02 Yukon Denali, ’02 Cadillac Escalade, while an ’01 Sierra C³ or ’02 Sierra Denali should also be compatible. Unless you made the change to the newer style ETC (DBW) and possibly other small items such as sensors and so on that was on the ’03 and up models, it would be more straight forward and guaranteed to work like stock if you stayed with the ‘01/’02 model year components. Again, the earlier model electronic throttle bodies and TAC modules are different from the later models and while I know it is possible to swap TAC modules and throttle peddle assemblies through various years, you can’t miss-match the styles of throttle-bodies and TAC modules without issues.

Autozone.com has different parts numbers for a 2002 Escalade 6.0L and a 2002 Silverado 5.3L?

Yeah, I got a new 6.0 starter. It's rated at 1.7kW whereas the 4.8 was 1.5kW from:
